The Final Tasting

A workshop to promote interest by winemakers in creating sparkling wine by the traditional method was developed in 2020. Led by an experienced winemaker, it began with the picking of Chardonnay grapes at low sugar content.

The following year the grapes were successfully fermented into a dry still white wine that formed the basis of what was later to become a sparkling wine. The Méthode Champenoise exclusively uses Champagne bottles to complete the final fermentation of the still wine after addition of a yeast starter and a small amounts of sugar. During the next year the fermentation in the bottle was allowed to complete and final disgorging was completed.

The Bubbles and Bites event was showcase to celebrate the success of the winemakers in creating lovely sparkling wines.
